Baked Cajun Chicken with Onion and Potatoes
Ingredients
- 3 tbsp Cobram Estate Garlic Crush extra virgin olive oil
- 3 tsp Cajun spice mix
- 8 chicken pieces on the bone, e.g. drumsticks, thighs
- 4 medium potatoes, peeled and diced
- 1 small brown onion, diced
- ½ tbsp rosemary leaves
- Salt and freshly ground black pepper• 3 tbsp Cobram Estate Garlic Crush extra virgin olive oil
- 3 tsp Cajun spice mix
- 8 chicken pieces on the bone, e.g. drumsticks, thighs
- 4 medium potatoes, peeled and diced
- 1 small brown onion, diced
- ½ tbsp rosemary leaves
- Salt and freshly ground black pepper
Method
- Preheat the oven to 200°C.
- In a bowl mix half of the Cobram Estate Garlic Crush extra virgin olive oil with the Cajun spices. Toss the chicken pieces in this preparation.
- Heat a baking dish, preferably non-stick, then add the remaining Cobram Estate Garlic Crush extra virgin olive oil. Brown the chicken pieces on high heat for a few minutes. Add the potatoes, onion and rosemary, toss well and cook for 3-4 minutes. Season with salt and pepper.
- Place the baking dish in the preheated oven and bake for about 20 minutes or until the chicken and potatoes are cooked.
- Serve with a green salad.
